vinification : The grapes are destemmed, then macerated for about 60 hours, then pressed gently. The must ferments spontaneously without added yeasts, and takes place partly in steel and partly in barrique.
Tocai and Riesling were pressed and fermented together, Moscato separately with six days between the harvest dates. Fermented part in oak barrel and part in still thank with its native yeast.
