vinification : The grapes are destemmed and partially crushed, then fermented partly in steel and partly in an oak barrel-shaped vat. Fermentation is spontaneous, without added yeast, and maceration lasts about 16 days. Malolactic fermentation takes place in the barriques.
aged : 24 months maturation, 12 in barriques, 6 in 50 hl oak barrel-shaped vat, 6 in the bottle.
